firstly, soak whole moong dal in water for overnight.

further drain off the water. tie the soaked moong dal in a cloth and hang overnight.

next day, moong sprouts appear in the dal. keep aside

now in a large kadai heat oil

further add mustard seeds, cumin and hing. allow to splutter

additionally, add onions and continue to saute

also add ginger garlic paste and green chili. saute well till the raw aroma disappears.

furthermore, add tomato and saute well

saute till the tomatoes turn soft and mushy.

additionally, add turmeric, chili powder, coriander powder, garam masala powder, dry mango powder, jaggery and salt.

saute on low flame till the masala gets cooked well completely and releases oil from sides.

further add sprouted moong dal.

also add water and mix well

adjust the consistency by adding water as required.

cover and simmer for 20 minutes or pressure cook for 2 whistles.

e dal well however, do not over cook as the sprouts will loose their nutritional value.

finally, serve sprouts curry garnished with coriander leaves along with jowar roti or rice.
